Our throw together “slow cook style” recipes are still everyones favorite.
Lea Tame’s Mexican Chicken Delight and Rice
In the larger pot put 2 to 3 pounds of thawed chicken breast, chopped into chunks.
One large Jar of chunky salsa
One drained can of chunky pineapple
One drained and rinsed can of black beans
One drained can of corn
Bring to a hard even boil for four minutes while stirring. At the same time make the rice in the smaller pot.
Bring 4 cups of water to a boil then add 2.5 cups rice and boil four minutes.
Stack the pot with the rice on top of the Mexican chicken meal. Slow cook for at least two hours. The meal can be eaten up to eight hours later. Serve with tortilla chips!
